Table and home bottles: Kikkoman Soy Sauce and Kikkoman Low Sodium Soy Sauce, 1 litre each. Restaurant sizes: Kikkoman Soy Sauce 0%, 10 litres, made in Japan; Seasir Regular Soy Sauce 0% and Seasir Less Salt Soy Sauce 0%, 18 litres each. Specialist Japanese soy: Yamasa Less Salt Soy Sauce, 18 litres; Morita Tamari Tokusei Soy Sauce, 18 litres; and Sakura Jirushi Usukuchi Sauce 0%, 1.8 litres, which is labelled halal. Chinese soy: Lee Kum Kee Light and Dark Soy Sauce and Haitian Light Soy Sauce, 1.9 litres each. Use Japanese soy for dipping sushi, seasoning ramen broth and making teriyaki. Light soy is for stir-fries and dressings, while dark soy adds colour and depth to braises. Usukuchi is lighter in colour, so it seasons a dish without darkening it. Questions We Get Asked Which soy sauce is best for sushi? A Japanese soy such as Kikkoman is the classic choice for dipping. If you're watching salt, Kikkoman Low Sodium or Yamasa Less Salt keep the flavour with less salt. What's the difference between light and dark soy sauce? Light soy is thinner and saltier and is used for everyday seasoning. Dark soy is thicker and a little sweeter and is mostly used for colour in braised and stewed dishes. Do you have halal soy sauce?
