We carry pieces from the Copper Core, d5 and Tri-Ply collections, as well as a range of complementary items. ---BUYERS GUIDE--- Established in 1971, All-Clad was the first company to make 'tri-ply' or bonded stainless steel cookware, where a heat-conducting metal – such as aluminium, copper, or graphite extends from the base to the edge of a pan. (Since stainless steel is not a good conductor of heat on its own, it needs to be supported with another metal.) Prior to All-Clad's pioneering technology, most stainless steel pans were made with the heat-conducting metal only at the base of the pan, which is significantly slower and less heat-responsive. Stainless steel makes an excellent cookware surface because it is induction-friendly as well as non-reactive, meaning food will not react with the metal, causing it to leech. It is also rust-resistant. Copper Core Every piece of All-Clad Copper Core is handcrafted and composed of alternating layers of stainless steel and aluminium with a middle layer of copper. This composition spreads heat quickly and evenly and allows for ultimate temperature control and precision.
