Cast iron cookware is a Borough Kitchen favourite. Extremely hard-wearing, it retains heat well and browns food evenly. Best of all, it's built to last a lifetime. These pans work on all hobs, the oven, and the barbecue. We carry a selection of the finest cast iron cookware, including iconic skillets from Lodge and Finex. Uncoated cast iron pans must be seasoned and maintained with care, as with time and use, they will develop a patina that makes them stick-resistant – an excellent, eco-friendly alternative to non-stick cookware. A raw cast iron pan, like our range from Lodge or Finex, will develop a non-stick surface over time. This is achieved by regular maintenance, which includes seasoning (baking a layer of oil onto the surface – to see our guide to seasoning a cast iron pan , click here ). It's important to note that these pans should not be washed with dish soap, until it has developed a strong patina (seasoned layer). Instead, clean with warm water and salt. The patina that will develop over time is a dark, glossy surface. An enamelled cast iron pan, like Staub, does not become more non-stick over time. What's the different between a cast iron pan (Lodge, Finex) and enamelled cast iron pan (Staub)? An enamelled cast iron pan, like our range from Staub, does not need to be seasoned, because it is coated with a layer of enamel, which acts as a barrier between your food and the raw cast iron. As such, it can be washed with washing-up liquid. It will not, however, become gradually non-stick over time, and is more costly than uncoated cast iron.
