Copper cookware allows for unsurpassed heat conductivity and control. We carry a range of copper pots, pans and saucepans, both as part of a set or individual pieces. We carry pieces from Mauviel, De Buyer, All-Clad and Hestan, in both traditional (non-induction) and induction-compatible makes. While most of our copper pans are lined with stainless steel for lifetime durability, we carry a select few specialty tin-lined and uncoated copper pans. ---BUYERS GUIDE--- Copper pots and pans are incomparable when it comes to heat responsiveness. When lined with stainless steel – as opposed to the more traditional tin, which needs to be re-tinned every few years – they offer durability. While the majority of our range is comprised of stainless steel–lined copper cookware, we also carry a few tin-lined heritage pieces as well as unlined copper pans for jam and confectionary-making. Due to the nature of copper as a soft metal, it tarnishes easily. This is a part of its charm, but the occasional polish with Mauviel Copperbrill Copper Cleaner will make it shine like new. Copper is not suitable for dishwasher-use. Below, we have broken down our range of copper pans into two key categories: traditional (not induction compatible) and induction-compatible. Traditional Copper Pans (No Induction) Since copper is not a ferritic (magnetic) material, it is not naturally compatible with induction hobs. We carry traditional copper pans from Mauviel; all of them are made in France. Mauviel M'Heritage (M'150S, M'150B, M'200B) The Mauviel M’Heritage range of copper pans are made from a combination of 1.5mm thick copper (90%) and stainless steel (10%). We believe this is the perfect amount of copper for home cooks, as it has near-perfect heat responsiveness and the pans are not too heavy to wield. The M'200 collection has a thickness of 2mm copper; this heavier style of copper pan makes it a popular option for chefs because the additional copper makes it slightly more heat-responsive. Handle
