Makes 12 servings. The cake can also be frozen. One of those special Dorothy's family recipes that comes out every Rosh Hashanah and always tastes like home. Ingredients For the Apple Filling 9 large apples, peeled, cored, and sliced ½ cup packed brown sugar 1 tbsp cinnamon ¼ tsp allspice, optional 2 tbsp all-purpose flour For the Batter 1 cup margarine, cut into pieces 4 eggs 1¾ cups granulated sugar 1 tsp vanilla ½ cup apple juice 2¾ cups all-purpose flour 4 tsp baking powder Method: Preheat the oven to 350°F (175°C). Grease and flour a 12-cup Bundt pan or 10-inch tube pan. Prepare the apples. Place the sliced apples in a large bowl. Add the brown sugar, cinnamon, allspice (if using), and flour. Toss until evenly coated. Make the batter. Beat the margarine with the eggs, sugar, and vanilla for about 2 minutes, scraping down the bowl as needed. Add the apple juice and mix briefly. Add the flour and baking powder and mix just until combined. Be careful not to overmix. Assemble the cake. Spread one-third of the batter into the prepared pan. Arrange half of the apple mixture over the batter, keeping the apples from touching the sides of the pan. Repeat with another third of the batter and the remaining apples, then finish with the remaining batter. Bake for 70–75 minutes, or until a toothpick inserted into the centre of the cake comes out clean. Let the cake cool in the pan for 20 minutes, then carefully turn it out and allow it to cool completely. Dust with icing sugar before serving, if desired. Enjoy!
