The rich culinary exchange between India and Britain, once full of history and influence, became muddled along the way, leaving behind a version of Indian food that felt disconnected from its roots. While other global cuisines have embraced the idea of quick, healthy meals, Indian food hadn’t been given that same space. For us, this wasn’t just a culinary loss - it was personal.
