The range runs from Kashmiri kahwa and saffron tea through spearmint and oolong green teas, white tea silver needles, and caffeine-free infusions like chamomile mint, rooibos, hibiscus and lavender. How to choose a leaf tea Leaf grade. Whole-leaf orthodox teas unfurl slowly and re-steep two or three times. Broken leaf and dust brew fast and strong but only once. Caffeine. White and green teas contain caffeine, roughly a third to half of black tea. Rooibos, chamomile, hibiscus and lavender contain none. Water temperature. Green and white teas scorch above about 80°C, turning bitter. Black and masala chai blends want a full rolling boil. Spice form. Blends built on whole crushed cardamom, ginger and clove hold aroma far longer than those relying on added flavouring. Storage. Tea absorbs surrounding odour. Keep it airtight, opaque and away from the masala dabba; most blends stay good for about a year.
