Scallops are sweet and tender with a delicate, almost buttery finish, quite different from the brinier flavors of other tinned shellfish. Tinned scallops usually come in escabeche or lightly smoked. Try them on toast with a squeeze of lemon, straight from the tin as a quick appetizer, or tossed into a simple salad.
