The vacuum pump choice matters more than it might seem: oil-free pumps need less maintenance but run louder and slightly less efficiently than oil-lubricated pumps, which need periodic oil changes but run quieter. Freeze-dried food stored properly (mylar bags plus oxygen absorbers) has a much longer shelf life than dehydrated food, since freeze-drying removes nearly all moisture without the heat damage a dehydrator causes.
