Cabbage gets a bad rap. It's often considered boring, something you only eat after boiling it half to death. But cabbage doesn't deserve its reputation. In reality, it's a versatile vegetable that grows in a range of satisfying flavors, shapes, and textures. It can be grown at the beginning and end of the season and some varieties can be stored after harvest. And if you can't get the image of boiled cabbage out of your head, try it raw in salads: it's fantastically sweet and crunchy.
