Growing Cauliflower from Seed Cauliflower is a rewarding crop that thrives in cool weather, producing dense, delicious heads perfect for roasting, steaming, or enjoying raw. Start seeds indoors 4–6 weeks before the last expected frost or sow directly outdoors in early spring or late summer for an autumn harvest. Sow seeds 0.5cm deep in trays or seed beds, keeping the soil moist and at a steady 18–21°C for optimal germination. Once seedlings have 4–5 true leaves, harden them off and transplant to fertile, well-drained soil in full sun, spacing plants about 45–60cm apart. Cauliflower prefers consistent moisture and benefits from a nutrient-rich soil with added compost or organic matter. To keep heads white and tender, tie outer leaves loosely over the curd as it develops. Harvest when heads are firm and compact for the best flavor and texture.
