Woven fabrics are in general more durable than knitted fabrics. Fabrics that are woven do not stretch as easily as knitted fabrics unless spandex is added. For sewing something that doesn't need to have a lot of stretch such as pants or a button up shirt, you should be using woven fabric. Finally, as a sewing beginner, starting the learning process with sewing woven fabrics rather than knit will be much easier.
