Ancient Grains is a term used to describe the 4 original domesticated wheats, grains and pseudocereals. The four main Ancient grains used in baking flour are Rye, Einkorn, Emmer, Spelt and Khorasan. The species are often 8000 to 10000 years old as opposed to modern varieties of grain which could be only a few decades and heritage varieties of wheat which would be hundreds of years.
