Teff makes fantastic flour for flatbreads such as Injera. The bread was developed to work with natural properties of the flour, fermenting it with water to make a batter that could be turned into a flatbread. Teff is an East African grass, predominantly grown in Ethiopia and Eritrea . Teff is high in protein, calcium and iron, and also possesses a fantastic set of amino acids. It is now touted as "super food". Teff flour can also be used to make a variety of other breads, pizza, pancakes, waffles and desserts.
