高知県で水揚げされたものを中心に、全国から集まるその時の旬を追いかけて選んでいます。ただ、カツオだけは捌いてみないと売り物になるかどうかの見極めができない魚です。「魚＝カツオ」という地域の人々に育てられてきたお店ですので、微妙なものは出しません。妥協せずに自分の目で見て美味しいと思うものだけを提供します。
