Oolong is partially oxidised tea, sitting between green and black tea on the processing spectrum, opening up a range of flavour no other category can match. Lightly oxidised oolongs are fresh, floral, and vegetal. Heavily oxidised ones become fruity, honeyed, and richly roasted.
