The Netherlands essentially invented the cheese that ages like candy. Aged Dutch gouda is the main event here: our 5 Year Aged Gouda goes deep amber and butterscotchy, dense with crunchy tyrosine crystals, and Beemster X.O. spends about 26 months ripening on milk from polder pastures that sit below sea level in North Holland. Beemster’s Vlaskaas is the same family at its creamy, approachable end. Then the old guard and the odd ones. Leyden, studded with cumin, a sailors’ cheese from South Holland. Ewephoria, a sheep’s milk gouda that drinks like dessert. Goat goudas — Midnight Moon among them — sweet, caramel-forward, and dangerously easy to finish. If you’ve only ever had young red-wax gouda, start with the aged stuff — bourbon, a brown ale, or a crisp apple next to it — and it becomes a completely different cheese.
