About
A bread knife earns its place through its edge, not its size. Ours are forged the same way our chef knives are — 67 layers of Damascus steel around a cobalt-enriched 10Cr15CoMoV core at 60±2 HRC — then given wide, deep serrations that saw through crust and stop dead at the crumb instead of crushing it. Every blade is hand sharpened and oiled before it ships. Which serrated blade you need For daily bread, the Damascus Dynasty 8" Bread Knife is the one to reach for: a hand-hammered black forged blade on a full tang black walnut handle, long enough for a sourdough boule and controlled enough to level a cake. The Silver Dynasty 8" Bread Knife is the same blade geometry in mirror-polished Damascus with an olive wood burl handle, if you want the brighter finish. When the job is a brisket, a prime rib or a holiday roast rather than a loaf, length wins. The 10" Ford F-150 50th Anniversary Serrated Knife runs a three-layer blade around an American S35VN core with an aggressive serration pattern and a G10 handle — the reach to carve a whole roast in single strokes without sawing back over the same cut. Questions we get asked What can a bread knife cut besides bread? More than most cooks expect. Because the serrations cut on the draw rather than on downward pressure, a bread knife is the safest blade for tomatoes, citrus, pineapple, melon and winter squash, and it is excellent on cakes, pastry and blocks of baking chocolate. How long should a bread knife be? Eight inches suits most home loaves and cakes. Go to ten if you regularly carve roasts or cut wide artisan boules — the blade should clear the food in one pass, because sawing back and forth over the same slice is what tears the crumb. Can a serrated knife be sharpened? Yes, though not on a flat whetstone. Each scallop is ground individually with a tapered rod. Good serrated steel holds its edge far longer than a straight edge, so most owners go years between sharpenings — and our free lifetime guarantee covers the blade f
