Also known as ormer and in New Zealand by the Maori term pāua, the abalone is a very superior limpet with a great reputation amongst gourmets. Ours are farmed in New Zealand in a sophisticated modern facility which has a top stewardship badge. Buy two abalone for about a tenner or a make a big saving on a one kilo bag containing about 14 abalone.
