John Dory is said to be a poor swimmer but it knows all about protection, hence a dangerous double row of spines along its back and ten more sticking out from its dorsal fin (the one at the top). Because it's so thin, the yield, or amount of edible flesh per fish, is very low - 40% lower than a from cod, say. However, it does grow to a good large size which means that even one John Dory fillet - from a big fish - will feed two people. Which, combined with fabled eating qualities, is a fair recompense for its price. To save you from encountering all those spines, we only sell John Dory as a fillet. Treat yourself.
