Marlborough dominates New Zealand wine, producing over 75% of the country's output on the South Island, and it's built its reputation on Sauvignon Blanc's tropical, passionfruit-forward side. Cross to Central Otago, the world's southernmost wine region, and Pinot Noir takes over instead, richer and darker-fruited than the lighter, cherry-driven style Marlborough also makes. Hawke's Bay rounds things out on the North Island, warmer and drier, better suited to Bordeaux-style blends, Chardonnay, and Syrah.
