Alipus Mezcal is an artisanal mezcal brand from Oaxaca, Mexico, produced in collaboration with local village palenques across the state. Each expression in the Alipus lineup is named after the village where it was made — San Andres, San Juan, Santa Ana, San Baltazar — reflecting the distinct terroir and production traditions of each community. All expressions are made from Espadín agave using traditional stone ovens, tahona or mallet crushing, and copper pot stills, offering a clear window into regional mezcal diversity.
