A Celebration of Wild Agave and Oaxacan Traditions Translating to "The Revelry"—the vibrant local festivals celebrated across rural Zapotec villages— El Jolgorio represents one of the most prestigious, collectible collections of artisanal mezcal in the world. Founded by the Cortés family (often referred to as mezcal royalty), El Jolgorio operates as a collective bringing together over 16 indigenous families across ten distinct micro-regions of Oaxaca. Rather than blending agaves, El Jolgorio focuses on single-species expressions—predominantly wild and semi-wild agaves that take anywhere from 8 to 25+ years to reach maturity. Every hand-marked bottle acts as a transparent record of authenticity, explicitly details the agave species, village of production, harvest year, specific Maestro Mezcalero , and exact bottle count. Artisanal Production & Sacred Methods Earth Pit Roasting: Agave hearts ( piñas ) are slow-roasted for days in underground conical earthen pits lined with volcanic river rocks and fueled by local oak, imparting balanced wood-smoke nuances. Traditional Milling: Roasted agaves are crushed using horse- or mule-drawn stone tahonas or hand-milled with wooden mallets. Natural Open-Air Fermentation: Fermentation occurs spontaneously in open wooden vats ( tinas ) using indigenous wild airborne yeasts. Double Distillation: Distilled twice in traditional small copper pot stills or clay pots ( Ancestral ) to isolate pure agave heart cut while preserving rich plant oils. Featured Wild Agave Expressions Tepeztate ( Agave marmorata ): Harvested from wild cliff-side plants aged 25+ years.
