Distillation using pot stills was well established in Scotland by the end of the 15th century. However, pot stills’ design is an evolution of an earlier device, the alembic, used for alcoholic distillation since the 9th century. Column stills, also known as patent, continuous, or Coffey stills, became common during the first quarter of the 19th century.
