Fresh whole cooked lobster goes on the market every Wednesday, Thursday and Friday during its season, straight after the boats land. Choose fresh when you know exactly which night you are eating, and enjoy it within two or three days of it arriving. The rest of the year, you will find frozen whole cooked lobster (400 to 600g live weight, minimum 350g cooked). It is the same lobster, cooked on landing day and frozen at its peak within hours, so nothing is lost. Keep one or two in the freezer and a celebration dinner is always ready. For Christmas it is the sensible choice: buy early, store it, and take the pressure off the week itself.
